Ingredients

  • 2 hard boiled eggs, quartered
  • 1 small avocado, chopped
  • 1 Tbsp red onion, finely diced
  • 1 Tbsp bell pepper, diced
  • 2 tsp white balsamic vinegar
  • 2 tsp extra virgin olive oil
  • Sea salt & black pepper, to taste
  • Crushed red pepper flakes, to taste 

Directions

1️⃣ Prep the Ingredients

  • Quarter the hard boiled eggs.
  • Chop the avocado, red onion, and bell pepper.

2️⃣ Toss & Season

  • Gently toss eggs, avocado, onion, and pepper together.
  • Sprinkle on vinegar, olive oil, salt, black pepper, and red pepper flakes.
  • Gently toss again.

3️⃣ Enjoy!

  • Serve immediately or store for same-day consumption (does not keep well).
