Ingredients

  • 5 cups old-fashioned rolled oats
  • 3 cups oat milk (or preferred milk)
  • 2 large eggs, lightly beaten
  • 2/3 cup organic maple syrup
  • 4 Tbsp extra virgin olive oil
  • 2 tsp vanilla extract
  • 1/2 cup chopped pecans (optional)
  • 2 tsp ground cinnamon
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1.5 cups fresh blueberries

Directions

1️⃣ Soak the Oats (for soft, chewy bars!)

  • In a large bowl, combine oats and oat milk. Cover and refrigerate overnight (8-12 hours) until the milk is absorbed.

2️⃣ Prepare the Batter

  • Preheat oven to 375°F (190°C) and grease a 9″ x 13″ baking dish (or use muffin cups for individual portions).
  • In a separate bowl, whisk together eggs, maple syrup, olive oil, vanilla, cinnamon, baking powder, and salt.
  • Stir the mixture into the softened oats until fully combined. Fold in chopped pecans.

3️⃣ Assemble & Bake

  • Pour batter into the prepared baking dish.
  • Gently press fresh blueberries into the top (this keeps them from sinking!).
  • Bake for 30 minutes, or until the top springs back when lightly touched.

4️⃣ Cool & Store

  • Let bars cool for 10 minutes before cutting into 12 squares.
  • Serve warm, or store in an airtight container:
    • Fridge: Up to 5 days (perfect for meal prep!)
    • Freezer: Up to 3 months (wrap individually for easy reheating).
