Ingredients

  • 2 Tbsp good-quality extra-virgin olive oil (plus more for serving)

  • 1 large yellow onion, chopped

  • 4 large carrots, scrubbed and diced

  • 3 cloves garlic, minced (about 1 Tbsp)

  • 1 cup low-sodium vegetable broth

  • 1 (28-oz) can crushed tomatoes

  • ½ cup dry-packed sun-dried tomatoes

  • 1 tbsp honey

  • ½ tsp kosher salt

  • ¼ tsp ground black pepper

  • 4 sprigs fresh thyme (or ½ tsp dried thyme leaves)

  • Chopped fresh basil or parsley, for serving

Directions

1️⃣ Sauté the Base

  • Set the Instant Pot to SAUTÉ.
  • Add olive oil, onion, and carrots.
  • Cook for about 3 minutes, until the onion is soft and translucent.

2️⃣ Add Garlic

  • Stir in garlic and cook for 30 seconds, just until fragrant.

3️⃣ Deglaze

  • Pour in the vegetable broth and scrape the bottom of the pot to release any stuck bits.

4️⃣ Build the Soup

  • Stir in crushed tomatoes, sun-dried tomatoes, honey, salt, and pepper.
  • Lay thyme sprigs on top (or stir in dried thyme).

5️⃣ Pressure Cook

  • Seal the Instant Pot and cook on HIGH pressure for 15 minutes.
  • Let pressure release naturally for 10 minutes, then carefully vent remaining pressure.
  • Remove thyme stems.

6️⃣ Blend

  • Use an immersion blender to blend until smooth and creamy.
  • No immersion blender? Carefully blend in batches using a regular blender.

7️⃣ Adjust & Serve

  • Taste and adjust seasoning as needed.
  • Ladle into bowls and top with fresh basil and a light drizzle of olive oil.
