Ingredients

  • 2 Tbsp olive oil (or avocado oil; for oil-free, use 4 Tbsp water)
  • ½ medium white or yellow onion, diced
  • 3 cloves garlic, minced
  • 5 medium carrots, scrubbed and sliced into ¼-inch rounds
  • 4 stalks celery, diced
  • ¼ tsp fine sea salt, plus more to taste
  • ¼ tsp black pepper, plus more to taste
  • 7–8 cups vegetable broth (use more for a lighter soup, less for thicker)
  • 1 (15-oz) can chickpeas, rinsed and drained
  • 4 sprigs fresh thyme (or 1 tsp dried)
  • 1 bay leaf
  • 8 oz pasta noodles (spaghetti broken into pieces or small shapes; GF as needed)

For serving (optional):

  • Sourdough or gluten-free bread, fresh parsley or extra thyme

Directions

1️⃣ Build the Base

  • Heat a large pot over medium.
  • Add olive oil and onion; sauté 5 minutes, stirring often, until translucent.

2️⃣ Aromatics & Veg

  • Stir in garlic and cook 1–2 minutes until fragrant.
  • Add carrots, celery, salt, and pepper; toss to coat.

3️⃣ Simmer

  • Pour in broth (start with 7 cups), add chickpeas, thyme, and bay leaf.
  • Bring to a gentle boil.

4️⃣ Add Noodles

  • Stir in pasta (break long noodles into bite-size pieces).
  • Cook ~8–10 minutes, stirring occasionally so they don’t clump.

5️⃣ Meld the Flavors

  • Reduce heat to very low, cover, and simmer 15–20 minutes to marry flavors.
  • Add a splash of extra broth if you prefer a lighter consistency.

6️⃣ Finish & Serve

  • Taste and adjust with more salt/pepper.
  • Remove thyme sprigs and bay leaf.
  • Ladle into bowls and garnish with fresh parsley or thyme.
  • Serve as is—or with warm, crusty bread.
