  • 1 Tbsp olive oil

  • 1 (15-oz) can black beans, drained and rinsed

  • 12 (6-inch) tortillas (corn, GF, or your favorite)

  • 1 medium avocado, chopped

  • ¼ cup red onions, chopped

Cilantro Lime Dressing

  • ½ cup sour cream (or plant-based alternative)

  • 2 Tbsp fresh lime juice

  • ½ jalapeño, seeded

  • ½ cup packed cilantro

  • Salt to taste

Directions

1️⃣ Prep the Oven

  • Preheat to 425°F.
  • Line a large baking sheet with parchment or foil.

2️⃣ Roast the Veggies

  • Spread zucchini, onion, bell pepper, and tomatoes on the baking sheet.
  • Toss with olive oil, ¾ tsp chili powder, and a few pinches of salt.
