Ingredients

  • 1 lb orange carrots, unpeeled

  • 1 lb rainbow carrots, unpeeled

  • 3 Tbsp extra virgin olive oil

  • 1 tsp kosher salt

  • ½ tsp freshly ground black pepper

  • 1 tsp grated orange zest (use organic, as citrus fruit is sprayed very heavily)

  • 2 Tbsp freshly squeezed orange juice

  • 1 tsp fleur de sel

Directions

1️⃣ Prep the Carrots

  • Remove carrot tops and scrub thoroughly.
  • Cut into long diagonal sticks, about 4 inches long by ½ inch wide, for even roasting.

2️⃣ Season & Roast

  • Place carrots on a sheet pan.
  • Drizzle with olive oil, sprinkle with salt and pepper, and toss with your hands to coat evenly.
  • Spread in a single layer.

3️⃣ Roast to Perfection

  • Roast at 450°F (230°C) for 15–20 minutes, turning once, until lightly browned and tender.

4️⃣ Add Citrus Finish

  • Sprinkle with orange zest, drizzle with orange juice, and add fleur de sel.
  • Toss gently to combine.
  • Serve hot or at room temperature.
