Ingredients

For the Meatballs

  • 8 oz ground pork

  • 8 oz grass-fed ground beef

  • ½ cup bread crumbs

  • ¼ cup chopped fresh parsley

  • 1 tsp minced fresh oregano

  • 1 cup shredded Parmesan cheese, divided

  • 1 large egg, beaten

  • ½ tsp salt

  • ½ tsp black pepper

For the Soup

  • 2 Tbsp olive oil or avocado oil, divided

  • 3 carrots, diced

  • 1 small yellow onion, diced

  • 4 stalks celery, diced

  • 4 cloves garlic, minced

  • 4 cups organic chicken bone broth

  • 1 cup uncooked orzo pasta

  • 2 cups fresh spinach, chopped

Directions

1️⃣ Make the Meatballs

  • In a large bowl, combine beef, pork, bread crumbs, parsley, oregano, half of the Parmesan, egg, salt, and pepper.
  • Mix gently with your hands until just combined.
  • Roll into small 1-inch meatballs and place on a baking tray drizzled with half the oil.

2️⃣ Broil

  • Place the oven rack on the highest shelf and set oven to broil.
  • Broil meatballs for 4–5 minutes, until lightly browned. (They will finish cooking in the soup.)

3️⃣ Build the Soup Base

  • Heat remaining oil in a large pot over medium-high heat.
  • Add carrots, celery, and onion. Sauté for about 8 minutes, until softened.
  • Stir in garlic and cook 2 more minutes.

4️⃣ Simmer

  • Pour in bone broth and bring to a gentle boil.
  • Add orzo and meatballs, reduce heat to medium-low, cover, and cook about 10 minutes — until pasta is tender and meatballs are fully cooked.

4️⃣ Finish

  • Stir in spinach until wilted.
  • Ladle into bowls and garnish with remaining Parmesan cheese.
