Ingredients

For the Sweet Potatoes & Chickpeas

  • 4 medium sweet potatoes, halved lengthwise

  • 1 (15-oz) can chickpeas, rinsed and drained

  • ½ Tbsp olive oil

  • ½ tsp cumin

  • ½ tsp coriander

  • ½ tsp cinnamon

  • ½ tsp smoked paprika

  • Pinch sea salt

Garlic Herb Sauce

  • ¼ cup hummus (or tahini)

  • Juice of ½ lemon (~1 Tbsp)

  • ¾–1 tsp dried dill (or fresh)

  • 3 cloves garlic, minced

  • Water or unsweetened almond milk to thin

  • Sea salt, to taste

Parsley-Tomato Topping

  • ¼ cup cherry tomatoes, diced

  • ¼ cup fresh parsley, minced

  • 3 Tbsp finely chopped red onion (optional)

  • 2 Tbsp lemon juice

Directions

1️⃣ Preheat

  • Preheat oven to 400°F (204°C) and line a baking sheet with foil.

2️⃣ Prepare Potatoes

  • Scrub and halve sweet potatoes lengthwise.
  • Lightly rub with olive oil and place cut-side down on the baking sheet.

3️⃣ Season Chickpeas

  • Toss chickpeas with olive oil, cumin, coriander, cinnamon, paprika, and salt.
  • Spread on the same sheet (or separate sheet if needed).

4️⃣ Roast

  • Bake for about 25 minutes, until sweet potatoes are fork tender and chickpeas are golden and slightly crisp.

5️⃣ Make the Sauce

  • Whisk together hummus (or tahini), lemon juice, dill, garlic, and enough water or almond milk to make it pourable. 
  • Adjust seasoning to taste.

6️⃣ Prepare Topping

  • Toss tomatoes, parsley, red onion (if using), and lemon juice in a small bowl. 
  • Let sit to marinate while everything finishes roasting.

7️⃣ Assemble

  • Flip sweet potatoes flesh-side up and gently mash the centers.
  • Top with roasted chickpeas, garlic herb sauce, and parsley-tomato salad.
  • Serve immediately.
