These warm, jammy roasted summer berries are a simple way to transform ripe (or slightly past-their-prime) fruit into something decadent, nourishing, and skin-loving.

  • Blueberries = Antioxidant Powerhouses → Their anthocyanins help reduce inflammation, balance excess oil, and protect against free radical damage.

  • Raspberries = Clarifying Vitamin C → Naturally astringent and high in vitamin C, they support collagen production and help oily skin feel fresh, not greasy.

Instead of refined sugar, sweeten with raw honey, maple syrup, or my personal favorite — hot honey — for a holistic spin that adds flavor while keeping things skin-friendly.

Ingredients

  • ½ pint black raspberries

  • ½ pint red raspberries

  • 1 pint blueberries

  • 1 vanilla bean, seeded and scraped (pod included)

  • 3 Tbsp sugar OR honey, maple syrup, or hot honey (for refined sugar-free)

Directions

1️⃣ Prep the Oven & Berries

  • Preheat oven to 400°F.
  • Rinse berries gently and pat dry. Place them in an oven-safe casserole dish.

2️⃣ Add Flavor

  • Seed and scrape the vanilla bean.
  • Add both the seeds and the pod to the berries.
  • Sprinkle with sugar, honey, or maple syrup.
  • Toss gently to coat.

3️⃣ Roast

  • Place dish in the oven and roast for 45–60 minutes, stirring once halfway through.
  • The berries should collapse into a thick, syrupy compote.

4️⃣ Serve & Enjoy

  • Spoon warm roasted berries over ice cream, yogurt, waffles, or even toast (see serving suggestions below).
