Ingredients

 For the grilled chicken: 

  • 16 oz. boneless, skinless chicken breast
  • 1 clove garlic, minced
  • 1 tsp salt
  • Optional: Black pepper, smoked paprika, or a dash of cayenne for extra flavor

 For the salad: 

  • 6 cups fresh baby spinach, roughly chopped
  • 3 cups fresh strawberries, sliced
  • 2 oz. soft goat cheese or 1 diced avocado
  • ¼ cup slivered nuts of choice (almonds, pecans, or walnuts work great)
  • Dressing of choice (recommended: balsamic vinaigrette, poppyseed, or cilantro-avocado)

Directions

1️⃣ Season & Grill the Chicken:

Rub chicken breasts with minced garlic, salt, and any additional seasonings of choice.


Preheat an outdoor grill (spray with oil) or heat 1 tbsp olive oil in a stovetop skillet. Cook chicken for 10 minutes per side , or until the internal temperature reaches 165°F. Let rest before slicing.

2️⃣ Prep the Salad:

While the chicken cools, slice strawberries, roughly chop the spinach, and crumble the goat cheese (or dice the avocado).

3️⃣ Assemble & Toss:

In a large bowl, toss the spinach with your chosen dressing.

4️⃣ Slice & Serve:

Cut the grilled chicken into thin slices at an angle. Divide the salad onto four plates and top with chicken, strawberries, goat cheese (or avocado), and slivered nuts.
