Ingredients

  • 1 cup brown rice
  • 1 ¾ cups bone broth (for added nutrients & flavor)
  • 1 Tbsp butter
  • 1 lb chicken cutlets (or halved chicken breasts)
  • ½ tsp salt
  • ½ tsp ground pepper
  • 1 Tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • ½ cup dry white wine
  • 1 bouillon cube
  • 4 cups fresh spinach, roughly chopped
  • 1 Tbsp lemon juice
  • ¾ cup heavy cream 

Directions

1️⃣ Cook the Brown Rice

  • Add brown rice, bone broth, butter, and a pinch of salt & pepper to an Instant Pot.
  • Set on pressure cook for 16 minutes. Let naturally depressurize for 10 minutes, then do a quick release.

(No Instant Pot? Cook brown rice on the stovetop according to package instructions using bone broth for extra depth of flavor.)

2️⃣ Prepare the Chicken

  • Season chicken cutlets on both sides with salt & pepper.
  • In a large skillet, heat olive oil over medium heat.
  • Add chicken and sear for about 6 minutes total, flipping halfway through. (Don’t overcook—it should be juicy!)
  • Transfer chicken to a plate and set aside.

3️⃣ Create the Sauce

  • In the same skillet, add minced garlic and the bouillon cube, stirring for 30 seconds until fragrant.
  • Increase heat to medium-high and pour in the white wine. Let it simmer for 1 minute, reducing slightly.
  • Bring heat back to medium, then stir in cream, lemon juice, salt, and pepper.

4️⃣ Wilt the Spinach & Finish the Dish

  • Add chopped spinach to the skillet and simmer for 1 minute, just until wilted.
  • Return chicken to the pan, flipping a few times to coat in the creamy garlic sauce.

5️⃣ Serve & Enjoy!

  • Spoon a bed of warm brown rice onto plates.
  • Place chicken on top and drizzle the creamy garlic-spinach sauce over everything.
