Ingredients

  • 8 oz chickpea pasta
  • 1 Tbsp extra virgin olive oil
  • 1Β½ cups shredded cheddar cheese
  • β…” cup pumpkin puree (not pumpkin pie filling!)
  • Β½ cup bone broth* (or low-sodium chicken stock)
  • Β½ cup plain Greek yogurt
  • β…“ cup reserved pasta water
  • 3 garlic cloves, minced
  • 1 yellow onion, diced
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp turmeric** (optional, for anti-inflammatory benefits)
  • Salt and pepper, to taste

Directions

1️⃣ Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Add chickpea pasta and cook for 8 minutes (or as directed on the package).
  • Drain, rinse with warm water, and toss with olive oil to prevent sticking. Set aside.

2️⃣ Make the Creamy Pumpkin Cheese Sauce

  • In the same pot, melt butter over low heat.
  • Add garlic, onion, chili powder, paprika, and turmeric.
  • SautΓ© for 3-4 minutes until onions are soft and translucent.

3️⃣ Add the Creamy Goodness

  • Stir in bone broth, Greek yogurt, and pumpkin puree.
  • Whisk until the mixture is smooth and velvety.
  • Add reserved pasta water and shredded cheese, stirring until completely melted and combined.

4️⃣ Combine & Thicken
