Seasoning Mix

  • 1 tsp sea salt
  • ¼ tsp black pepper
  • 2 Tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp red pepper flakes (optional)

Fajitas

  • 2 Tbsp avocado oil
  • 3 medium bell peppers, thinly sliced (a mix of colors is beautiful)
  • 1 medium yellow or white onion, thinly sliced
  • 2 lbs boneless, skinless chicken breast, cut into strips

Optional for serving:

  • Guacamole or sliced avocado
  • Fresh salsa
  • Sour cream or plain Greek yogurt
  • Shredded cheese
  • Warm corn tortillas
  • Lettuce cups

Directions

1️⃣ Mix the Seasoning

  • In a small bowl, combine salt, pepper, chili powder, smoked paprika, garlic powder, oregano, and red pepper flakes.
  • Divide the seasoning mixture into two portions.

2️⃣ Cook the Vegetables

  • Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat.

  • Add bell peppers, onions, and half of the seasoning mixture.

  • Sauté for about 5 minutes, stirring often, until vegetables are tender but still slightly crisp.

  • Transfer to a plate.

3️⃣ Cook the Chicken

  • Add the remaining avocado oil to the skillet.
  • Add chicken strips and the remaining seasoning mixture.
  • Cook, stirring frequently, for about 4–5 minutes until the chicken is nearly cooked through.

4️⃣ Cook Everything Together

  • Return the vegetables to the skillet and cook for another 1–2 minutes until the chicken is fully cooked and everything is hot.

5️⃣ Serve

  • Serve as a fajita bowl, in warm tortillas, or in lettuce cups.
  • Top with guacamole, salsa, and your favorite toppings.
