Instead of refined white flour, this recipe starts with certified gluten-free rolled oats blended into oat flour. Add eggs, milk, cinnamon, and vanilla, then finish them with fresh fruit, nuts, seeds, or nut butter for an easy whole-food breakfast.

Add rolled oats to a blender or food processor.
Blend for several seconds until they reach a flour-like consistency.
Combine the oat flour and milk in a mixing bowl.
Let sit for about 10 minutes so the oats can absorb some of the liquid.
Stir in the egg, baking powder, cinnamon, vanilla, and salt.
If the batter seems too thick, add another small splash of milk.
Heat a lightly greased skillet or griddle over medium heat.
Spoon about ¼ cup of batter onto the skillet for each pancake.
Cook until bubbles begin forming and the edges look set, about 2–3 minutes.
Flip and cook another 1–2 minutes, until golden and cooked through.
