Ingredients
- 2 hard boiled eggs
- 1 small avocado
- 1 Tbsp red onion
- 1 Tbsp bell pepper
- 2 tsp white balsamic vinegar
- 2 tsp extra virgin olive oil
- Sea salt to taste
- Black pepper to taste
- Crushed red pepper flakes, to taste
Directions
1. Quarter each hard boiled egg.
2. Chop avocado, red onion, and bell pepper.
3. Gently toss all of these together.
4. Sprinkle on vinegar, olive oil, and spices.
5. Gently toss together again.
6. Enjoy immediately or store for same day consumption (does not keep well).
