Ingredients
- 2 cups dry white beans
- 1/2 cup olive oil
- 2 bell peppers (chopped)
- 1 onion
- 1 garlic clove
- 8 grape tomatoes quartered
- 1 Tbsp oregano
- 1 Tbsp tomato paste
- 1/2 cup water
- Salt, pepper, and red pepper flakes (to taste)
Directions
1. Rinse beans and spread them out on a towel to pick out any pieces of rock, sediment, or shells.
2. Place beans in bowl and cover with cold water (water level needs to be several inches above the top of the beans, as they will soak up quite a bit).
3. Soak overnight (8-12 hours).
4. Drain and rinse beans well.
5. Put beans in stock pot and simmer for about 30 minutes. Drain and set aside.
6. Chop peppers, onion, and garlic. Combine in a large bowl.
7. Dilute tomato paste in the 1/2 cup of water and add to chopped vegetables.
8. Add olive oil, oregano, salt, and pepper.
9. Gently mix in the white beans and tomatoes.
10. Transfer everything to a 9x13 glass casserole dish and drizzle 1/4 cup water over the top.
11. Cover with foil and roast for one hour.
12. Remove foil and roast for another ten minutes.
13. Add red pepper flakes (optional).

We eat this on its own as a main course (even my meat-eating husband is a fan), though it can be enjoyed in veggie tacos, as a healthy side at a BBQ, or as a base for other types of protein to be added.
The beans keep incredibly well in Tupperware (refrigerated) for several days and are great cold or warmed.
