Ingredients
- 16 oz. boneless skinless chicken breast
- 1 clove garlic
- 1 tsp salt
- 6 cups baby spinach (fresh)
- 3 cups sliced strawberries
- 2 ounces soft goat cheese and/or avocado
- Slivered nuts of your choice (optional)
- Dressing of choice (recommend balsamic vinegar, poppyseed, or cilantro-avocado for this recipe)
Directions
1. Season uncooked chicken with salt, garlic, and other seasonings of choice.
2. Spray outdoor grill with oil (or add about a Tbsp of oil to stovetop skillet) and cook chicken 10 minutes on each side until cooked through. Set aside to cool.
3. Cut strawberries into slices.
4. Roughly chop spinach.
5. In a large bowl, toss spinach with dressing of choice (see recommendations in the ingredient list above).
6. Cut cooled chicken into slices at an angle.
7. Divide spinach between 4 plates and top with chicken, strawberries, goat cheese, avocado and nuts.
