Ingredients

  • 1 cup roasted, unsalted almonds (divided)

  • ½ cup raw pumpkin seeds (pepitas)

  • ½ cup raw sunflower seeds

  • ¼ cup unsweetened coconut flakes

  • ¼ tsp salt

  • 1 tsp ground cinnamon

  • 1 tsp vanilla extract

  • 3 Tbsp local raw honey (or sub organic maple syrup for vegan option)

  • 1 Tbsp melted coconut oil

  • Avocado oil spray or neutral oil for greasing

Directions

1️⃣ Prep Your Pan

  • Preheat oven to 325°F (165°C).
  • Line an 8×8-inch baking dish with parchment paper and lightly spray with avocado oil or brush with coconut oil.

2️⃣ Chop & Mix

  • Roughly chop ½ cup of the almonds.
  • In a mixing bowl, combine the chopped and whole almonds with pumpkin seeds, sunflower seeds, coconut flakes, salt, and cinnamon.

3️⃣ Bind & Flavor

  • Stir in vanilla, melted coconut oil, and honey.
  • Mix well until everything is evenly coated and sticky.

4️⃣ Press & Bake

  • Transfer the mixture to your prepared pan.
  • Press down firmly with a spatula to create a compact, even layer.
  • Bake for 35–40 minutes, or until golden brown and set.

5️⃣ Cool & Slice

  • Place the pan on a cooling rack.
  • Press down again gently with the back of a spoon while still warm.
  • Allow to cool completely before slicing into 8 even bars.

6️⃣ Store Smart

  • Keep in an airtight container at room temperature for up to 5 days, or in the fridge for longer shelf life.
  • Place parchment between bars to prevent sticking.
