Ingredients

  • 1 small watermelon (or half of a large one), cut into cubes

  • 1 English cucumber, thinly sliced or halved and sliced

  • 15 fresh mint leaves, torn

  • 15 fresh basil leaves, torn

  • ½ cup feta cheese, crumbled

  • 2 Tbsp extra virgin olive oil (EVOO)

  • Juice of 1 lime

  • 2 Tbsp raw local honey

  • Pinch of salt

Directions

1️⃣ Assemble the Salad

  • Add your watermelon cubes, cucumber slices, and torn fresh herbs to a large salad bowl or wide platter.

2️⃣ Mix the Dressing

  • In a small bowl, whisk together the honey, lime juice, EVOO, and a pinch of salt.

3️⃣ Dress and Toss

  • Drizzle the honey-lime dressing over the salad and gently toss to combine.

4️⃣ Top with Feta

  • Finish by crumbling feta cheese over the top. Serve immediately or chill briefly to let flavors meld.
