  • ½ cup natural peanut butter
  • ⅓ cup honey
  • 2 tsp vanilla extract
  • ¼ tsp sea salt
  • 1 cup unsweetened shredded coconut
  • ½ cup raw pepitas
  • ½ cup raw sunflower seeds
  • ¼ cup chia seeds
  • ¼ cup hemp hearts

Directions

1️⃣ Prepare the Pan

  • Preheat oven to 325°F.
  • Line an 8x8-inch baking dish with parchment paper.

2️⃣ Warm the Wet Ingredients

  • In a small saucepan over low heat, gently warm the peanut butter and honey until smooth.

  • Remove from heat and stir in vanilla and sea salt.

3️⃣ Mix

  • In a large bowl, combine coconut, pepitas, sunflower seeds, chia seeds, and hemp hearts.
  • Pour the warm peanut butter mixture over the dry ingredients and stir until everything is evenly coated.

4️⃣ Press Firmly

  • Transfer the mixture to the prepared pan.
  • Using the back of a measuring cup or lightly oiled hands, press the mixture down very firmly into an even layer.

5️⃣ Bake

  • Bake for 20–25 minutes, or until the edges are lightly golden.

6️⃣ Cool Completely

  • Allow the bars to cool completely before lifting them out with the parchment paper.
  • Slice into 16 bars.
  • Store in an airtight container in the refrigerator for up to one week.
